The inside of the potato is well done, yet moist, while the skin remains tender.  No more pricking them with a knife, covering them with plastic wrap or hot plates ..... Just cook them in the bag ... take them to the table to keep them warm ...remove from bag and cut them with a fork. They will be very fluffy.
